Bakewell Tart

Description

The traditional dessert, with a vegan option for the recipe.

Ingredients

  • 8oz pastry (made with adding 4 tsp castor to the ingredients.optional)
  • Blackcurrant or strawberry jam
  • 2 eggs or 2tsp egg replcer+4tbs water
  • 4 oz brown sugar
  • ½ tsp almond essence
  • 4oz margarine (dairy free)
  • 5oz ground almonds
  • flaked almonds for topping

Method

  • Line a 9.5" flan dish with pastry spread jam in a thin layer over it
  • Cream margarine and sugar, add egg or egg replacer and almond essence, beat well and then fold in ground almonds
  • Place mixture on top of jam and spread evenly sprinkle flaked almonds on top
