Mock Cheese Cake
Ingredients
- 10oz co-op digestive biscuits
- 3 1/2oz dairy free margarine
- 1 packet firm tofu (morinaga)
- 2 dessertspoonfuls castor sugar
- Juice and grated rind of 1 lemon
- 1/4 packet soya cream
- 1 tin cherry pie filling
Method
- Make base by mixing the crushed biscuits with the melted fat and lining a flan dish with the mixture
- Beat all remaining ingredients together and pour onto base.
- Cook at 175 f for 30 mins
- When cool spread cherry pie filling on top to finish.
