Tofu Vegan Cheesecake

Ingredients

    For the base
  • 16oz (150grams) co-op digestive biscuits or other vegan biscuits
  • 3 1/2 oz dairy free margarine
  • For the filling
  • 10oz( 285g) firm silken style tofu (mori-nu)
  • 2 tbs vegetable oil
  • 2oz caster sugar
  • juice and rind of 1 lemon
  • 1tsp vanilla essence
  • 1 1/2 oz ground almonds
  • 2 oz sultanas

Method

  • Make the base by mixing crushed biscuits with the melted margarine.
  • Spoon into a loose base flan tin and press down evenly.
  • Put tofu,oil,sugar,lemon juice and rind,vanilla essence into food blender and blend thoroughly.
  • Stir in ground almonds and sultanas.
  • Spoon filling onto base and spread evenly.
  • Put in oven for 30mins 350 F (180 C gas mark 4).
  • Cool, and chill before serving.
