Australian Banana Bread
Description
This banana type bread is available in all the cafes around Sydney but unfortunately it would normally contain eggs. This recipe was adapted using egg replacer but tastes equally as good.
Ingredients
- 1 1/2 cups white flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 nutmeg
- 1 tsp ginger
- 1/2 stp cardamom (if available)
- 3 small or 2 over ripe bananas (should equal at least 1 cup full mashed)
- 1/2 cup vegetable oil
- 1 tsp Orgran egg replacer with 1 tablespoons water whisked together or 1 tbsp cornstarch + 1 tbsp lemon juice + 1 tbsp water
- 1/2 cup white or brown sugar
- 1/2 - 3/4 cup chopped walnuts
Method
- Preheat oven to 350 degrees and oil a medium bread pan
- Mix all dry ingredients together
- Mix all wet ingredients together including the banana
- Pour wet ingredients into dry and mix lightly
- Spoon mixture into loaf tin and bake for 45 mins, middle of oven until browned and firm to the touch.
- Cool on rack in pan for 5 mins and then tip out to finish cooling
